Deep Fried Asparagus

Never having eaten or cooked deep fried asparagus we were lucky enough to be sent this recipe by Del Merril Asparagus Queen 2012 of Shelby Oceana County Michigan. As soon as we have tried it we will put our pictures up for you to see.

INGREDIENTS

1 cup all-purpose flour

3/4 cup cornstarch

1-1/4 teaspoons salt

1-1/4 teaspoons baking powder

3/4 teaspoon baking soda

3/4 teaspoon garlic salt

1/2 teaspoon pepper

1 cup beer or nonalcoholic beer

3 egg whites

2-1/2 pounds fresh asparagus, trimmed

Oil for deep-fat frying

Directions

  1. In a large bowl, combine the flour, cornstarch, salt , baking powder , baking powder, garlic salt and pepper
  2. Combine the beer and egg whites; stir into the dry ingredients just until moistened. 
  3. Snap off the ends of the asparagus and rinse in cold water to esnure their is no grit.
  4. Dip the asparagus into the batter.
  5. In an electric skillet, heat 1-1/2 in. of oil to 375°.
  6. Fry the asparagus in batches for 2-3 minutes on each side or until golden brown.
  7. Drain on paper towels.
  8. Serve immediately with ranch dressing.
  9. Yield: 2-1/2 dozen

Deep Fried Asparagus seems to be the order of the day at Asparagus Festivals in the USA, you'll find pictures of some very tasty looking samples at Stockton Asparagus Festival.

You will also find that there are deepfried asparagus eating contests. I don't really fancy these eating competitions myself. However you if you think you can eat of the order of 9lbs or so you should line up against Joey Cheshunt who is the Asparagus Eating specialist!
