Asparagus Wrap

I love an asparagus wrap in the summer. If you are looking for a quick snack, a light lunch or a way to keep a hungry child fed healthily between meals a soft wrap with a filling of fresh vegetables and other goodies is always going to be a good bet. Asparagus wrap ready to roll

You can try different combinations depending on what you have to hand. I was having a treat with the one in the photo and added prawns instead of ham or chicken. It also looks as though I shredded my asparagus lengthways for a change! 

There is a knack to making wraps that don't fall apart and keeping the filling inside until you are ready to eat it. We will give you a few ideas.

INGREDIENTS

1 round soft wrap

2 or 3 asparagus spears

a little mayonaise

a few lettuce leaves

some fresh coriander, basil or other herbs if you any to hand

a small amount of ham or cooked chicken (cold)

a desert spoonful of canned sweetcorn

chopped cucumber or tomatoes or both

a teaspponful of pinenuts

salt and pepper to taste

Directions

  1. Place the wrap on a plate.
  2. Spread some mayoniase over the whole wrap but especially the edges. (This acts as glue to help hold the wrap together as well as giving a nice flavour)
  3. Wash the salad items and the asparagus. Chop the asparagus into 1 inch lengths or if you prefer cut to the length you want your finished wrap to be (if you do this line them up on the wrap and put the other ingrediants around them).
  4. Place the asparagus spears and the other ingrediants on the wrap going up to the top edge, stopping about one and a half inches from the bottom edge and keeping it in the middle with space to left and right.
  5. Fold the bottom one and a half inches that has no mix on it up over the ingrediants.
  6. Turn the plate through 90 degrees (one quarter turn) and fold the spare wrap over the mix from bottom to top then roll up. You might need a little more mayonaise to help the last piece stick together.
  7. Enjoy your snack.

If you don't like such a high proportion of wrap just put the mix across the middle of the wrap and role from one side to the other. You can then either eat it with a knife and fork or cut it in half and try not to lose the filling from the bottom!

When our daughter was still at school I used this technique then wrapped the bottom of the asparagus wrap in foil to keep the filling in place in her lunch box. She seemed happy with the solution and her friends were impressed with what she got for lunch.
